Daily Report

Time and Date : Tuesday, April 2 2019

Name of Student : Bergita Noviana Saleo

Subject : Rotation II.2 and Rotation II.1 (Serving)

Today we gather at the kitchen at 8 o'clock to do practic. Today We are continue the process of Rotation II.1(serving) and also handle the Rotation Menu II.2. Why ? 'Cause tomorrow is a holiday, so Rotation II.2 will handle and serving today. Every group is starting doing to make their food and My group's food's is 'Traditional Egg drop Soup'(china), 'Gai Tod Takrai and Yam makeua Yaw with Khau Plao' (Thailand). In 12 o'clock we stop do everything 'cause its time for rest and shalat. After that, we continue to handle the food. Maybe about 15 o'clock moreless' every food is done and ready for explain to the lecture. After Explaning, we Do General Cleaning with Senior til finish. Then, we gather behind the kitchen until we directed to line up for praying and go home.


TRADITIONAL EGG DROP SOUP

Ingredients :
Ginger
Green onion
Ground chicken
Frozen corn
Frozen peas
Chicken stock
Maizena
Egg
Oil

How to make :

Make chicken stock, after finish keep it for a while

Saute the green onion and ginger in stock pot

Put in the chicken stock, boil it

Put in the ground chicken, corn, and peas and stir well in view times

Put in the maizena, stir and mix well

Put in the egs , Stir well again

If your soup is look semi thick it means your soup is ready

Plating in soup bowl depend on category menu or portion


GAI TOD TAKRAI

Ingredients :

Lemongrass
Pepper
Chicken(cut 8)
Garlic
Salt
Palm sugar
Thai fish sauce
Thai chilli
Oil

How to make :

Seasoning the chicken with lemon grass, pepper,oil, garlic, salt, fish sauce, chilli, and palm sugar.

After sseasoning' keep for a while and then SousVide for 40 minutes

The fry the chicken until change to Golden Brown.

Plating with the Yam Makeua Yaw and Khau Plao.



YAM MAKEUA YAW

Ingredients :

Eggplant
Pepper
Lemon
Thai chilli
Sugar
Fish sauce
Shallot

How to make :

Grill the eggplants with the pepper'after that keep for a while .

Make the sauce with mix the sugar, chilli, lemon, and fish sauce.

Plating with the Gai Tod Takrai and Khau Plao

Pour the shallot on top of eggplants.



KHAU PLAO

Ingredients :

Water
Rice

How to make :

Boil the water with the rice about 30 minutes moreless.

Plating with Gai Tod Takrai and Yam Makeua Yaw.
