Daily Report

Time and Date : March 4 2019
Name of Student : Bergita Noviana Saleo
Subject : Rotation 1.1

Today at 06.00 o'clock  moreless we are gather at the kitchen. First day on this week we will Practic to prepare for the Rotation 1.1. Before do practic in the kitchen we are checked for our grooming and equipment by the supervisor. After that we are gather at pastry and line up to be divid  become a view group. We are divid become a 4 group that would handle 5 dish which is Appetizer, Soup, MainCourse, dessert, and Breakfast.

I join the Group 2, We are eight at the group  2. And today my group would handel the preparation if Soup, there is Shrimp Bisque. After got the own job, every group is starting to prepare. Start from the Ingredients, utensil, equipments, until the process of making is done. After that we have a rest time and shalat for the musleem about 1 hour moreless.

After rest time we back to the kitchen and check again  our preparation for rotation 1.1 on the nextday. And Make Sure all the preparation for the dish tommorow is keep well on each temperature. After that we do The General Cleaning with senior, until it finish then we take some rest behind the kitchen. And for last we gather again and lineup to Praying together and go home.

Shrimp Bisque.

Ingredients :
1.butter
2.onion
3.carrot
4.shrimp
5.bay leaf
6.dried thyme
7.fresh parsley
8.tomato paste
9.brandy or wine
10.fish stock
11.fish valute
12.heavy cream
13.salt
14.white pepper

How to make :
-Make the stock for first(shrimp and fish stock)
-saute the carrot and onion,put in the shrim until turn red and tomato paste next.
- at the brandy or wine
- add the stocks and valute,season to taste with the salt and white peper , stir well
- simmer the heavy cream
- for serve, turn some art from the  cream on the soup
.
