Subject : Rotation 1.1 and Preparation for Rotation 1.2
Today we are coming to the Kitchen about 06.00 moreless. Before doing, our tools and grooming are checked by the supervisor. After that we just start to get our preparation ready (make it cooked and complete), all food have to be ready before 10 o'clock. 'Cause the food will serve to the restaurant at 10 o 'clock.
At 10.00 all food is going out to the resto and sold out by order. After all is handled, next is the time to prepare for Rotation 1.2 and my group has the chance to make The Fillet of Sole Meuniere. Its about 2 hours moreless, until we rest and shalat for the musleem. After rest and shalat we're back to kitchen and checked our preparation for Rotation 1.2 to keep it to each temparature. Next, we eat together behind the kitchen.
After eat, we do General Cleaning together, until it finish, we gather and take some rest behind the kitchen until we gather and line up for praying and then go home.
Fillet of Sole Meuniere
*Ingredients
Sole fillets
Salt
White pepper
Flour
Butter or oil
Lemon juice
Parsley
Butter
Slices of peeled lemon
Have all ingredients ready
*how to make
Dont season and flour the fish except it cooking by order
Season the fillet with salt and pepper, place the butter in pans, with medium heat.
Dredge the fish with the flour and shake off excess and then place the fish in the pan
Saute until lightly browned .turn the other side,be careful, dont break the fish when turning
Remove the fish with spatula slowly, and put on dinnet plates.
Sprinkle the fish with lemon juice and parsley
Heat the butter on pan
After the butter melt, Pout it over the fish.
For serve
Place the lemon slice on top each fillet
